5-Star Oyster Stuffing


INGREDIENTS
  • 3 tbsp butter
  • ¾ cup chopped white onion (chopped)
  • ¾ cup green pepper (chopped)
  • ¾ cup celery (chopped)
  • 3 cloves of garlic (minced) 
  • 3 scallions (chopped)
  • 8 oz can of Reese Sliced Water Chestnuts (drained and roughly chopped)
  • 1 cup Reese Chopped Artichoke Hearts (drained)
  • 2 tbsp Reese Non-Pareil Capers (drained) 
  • 1 tbsp fresh tarragon
  • 1 tbsp fresh sage
  • 1 tbsp fresh rosemary
  • 4 cans of Reese Large Smoked Oysters 
  • 1 ½ – 2 cups chicken broth
  • 8 cups of chopped French baguette. 
  • Salt & pepper to taste

DESCRIPTION

This savory, seafood-inspired stuffing is a unique twist on a classic holiday side dish, perfect for those who love bold flavors and tender textures. French baguette cubes soak up a rich blend of chicken broth, butter, and the smoky essence of oysters, while chopped artichoke hearts, capers, and water chestnuts add briny, earthy depth and a satisfying crunch. Fresh herbs like tarragon, sage, and rosemary bring aromatic warmth, while a medley of onions, green peppers, and celery adds a traditional touch. Baked to golden perfection, this dish pairs beautifully with roasted meats or can stand alone as a hearty, flavorful main. 


DIRECTIONS
  1. Preheat oven to 400°f. Grease an 8×10 (or similar size) pan.
  2. Add the butter to a large skillet set to medium high heat. Allow to melt.
  3. Add the onion, green pepper, celery, garlic, scallions,  Sliced Water Chestnuts, Chopped Artichoke Hearts, Non-Pareil Capers, and herbs to the skillet. Allow to cook until softened and cooked through. Stirring frequently. 
  4. Add in the Large Smoked Oysters (and juices) and the broth. Stir to combine.
  5. Add in the chopped baguette and stir to evenly coat. Cook for 3-5 minutes or until bread has absorbed the juices and is evenly saturated. You can add more broth if the dressing is too dry.
  6. Add the dressing to your prepared pan. Bake covered for 20 minutes.
  7. Uncover and bake an additional 10 minutes or until it has reached your desired level of doneness. 
  8. Please note, you can make this dressing ahead and refrigerate or even freeze.
