Artichoke & Brie Grilled Panini

INGREDIENTS
  • 1 cup Reese Marinated Artichokes, chopped
  • 2 tbsp fresh thyme leaves (or 1 tbsp dried thyme)
  • 1 tbsp fresh chopped oregano (or 2 tsp dried oregano)
  • 1/4 tsp crushed red pepper flakes
  • kosher salt and black pepper
  • 6 oz Brie, rind left on, and sliced
  • DaVinci extra virgin olive oil for rubbing
  • 8 slices challah, sourdough, or ciabatta bread

DESCRIPTION

Grilled Cheese 2.0! We amped up everyone’s favorite sandwich with only 2 main ingredients: brie and marinated artichokes.  There’s plenty of crunch, cheesiness and tanginess to please your palate. 


DIRECTIONS
1. In a medium bowl, combine the artichokes, thyme, oregano, red pepper flakes, and a pinch each of salt and pepper.
2. Rub the outsides of the bread generously with olive oil. Evenly layer the brie and artichoke mix. Sprinkle with black pepper. Add the top piece of bread.2. 3. Heat a panini press or large skillet over medium-high heat. Place the sandwiches, one at a time, into the panini press and cook until the cheese is melted.
