Artichoke Spinach Pasta Salad

This easy Artichoke Spinach Pasta Salad is always the most popular side dish at parties and potlucks! This will become a go to summer salad for entertaining, especially with the ultimate combo of spinach and artichoke hearts. 

Prep Time: 
15 minutes

1 lb penne pasta
2 (15-oz) cans of Reese Quartered Artichoke Hearts, rinsed, drained and coarsely chopped
3 cups fresh spinach, stems removed and coarsely chopped
½ cup shredded Parmesan cheese
¾ cup sour cream
⅓ cup mayonnaise
1½ tsp Italian seasoning
1 tsp dried parsley
2 tbsp fresh lemon juice
1 garlic clove, minced
salt and pepper

1. Cook pasta until al dente then rinse with cold water and drain well.
2. In a medium bowl, combine sour cream, mayo, Italian seasoning, dried parsley, garlic, and salt and pepper. Stir well.
3. When pasta is drained, transfer to a large bowl. Pour dressing over and toss to coat.
4. Add spinach, artichokes, and cheese. Stir well to combine.
5. Chill until serving, at least two hours.
