Artichoke Spinach Pasta Salad

INGREDIENTS
  • 1 lb penne pasta
  • 2 (15-oz) cans of Reese Quartered Artichoke Hearts, rinsed, drained and coarsely chopped
  • 3 cups fresh spinach, stems removed and coarsely chopped
  • ½ cup shredded Parmesan cheese
  • ¾ cup sour cream
  • ⅓ cup mayonnaise
  • 1½ tsp Italian seasoning
  • 1 tsp dried parsley
  • 2 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • salt and pepper

DESCRIPTION

This easy Artichoke Spinach Pasta Salad is always the most popular side dish at parties and potlucks! This will become a go to summer salad for entertaining, especially with the ultimate combo of spinach and artichoke hearts


DIRECTIONS
1. Cook pasta until al dente then rinse with cold water and drain well.
2. In a medium bowl, combine sour cream, mayo, Italian seasoning, dried parsley, garlic, and salt and pepper. Stir well.
3. When pasta is drained, transfer to a large bowl. Pour dressing over and toss to coat.
4. Add spinach, artichokes, and cheese. Stir well to combine.
5. Chill until serving, at least two hours.
