Brasied Carrots with Capers

Complement your main meals with an impeccable side dish. The carrots’ sweetness is balanced by Reese Capers, that offer a bright, acidic, and addictive touch.

Ingredients: 

1 lb. carrots
3 tablespoons DaVinci Olive Oil
2 large Garlic Cloves, finely chopped
3/4 cup Water
½ teaspoon Fresh Thyme
½ teaspoon Salt
¼ teaspoon Black Pepper
2 tablespoons Reese® Capers, drained

Directions: 
1. Wash and peel carrots then cut in half lengthwise to resemble long “finger” sticks.
2. Heat cast iron skillet on high heat then add olive oil and chopped garlic. Sauté for a couple of minutes on medium heat.
3. Next, add the carrot fingers and toss carrots in the olive oil to coat evenly.
4. Add ¼ cup of water to the skillet and allow to evaporate then add another ¼ cup. Continue with this process until the carrots are fork tender, about 15-20 minutes.
5. Lastly, season with salt, black pepper, the Reese® Capers and fresh thyme. The residual heat will warm the capers and slightly wilt the thyme.
6. Serve hot in the skillet or on a warm platter.
