Brazilian Avocado Salad

INGREDIENTS
  • 2 – 14 oz. cans Reese Hearts of Palm, drained and sliced ½ inch thick
  • 1 Hass avocado, cut into ½-inch pieces
  • 1 cup yellow cherry tomatoes, halved
  • ½ small sweet onion, cut into thin slivers
  • ¼ cup cilantro, coarsely chopped
  • ½ tsp. lime zest, finely grated
  • 2 tbsp. lime juice, freshly squeezed
  • 2 tbsp. mayonnaise
  • 2 tbsp. canola oil
  • Salt and pepper, to taste

DESCRIPTION

This Brazilian-inspired dish combines fresh tomatoes and hearts of palm with a creamy avocado dressing for the perfect summer salad. 


DIRECTIONS
1. In a medium bowl, combine cherry tomatoes, onion slivers, hearts of palm, avocado, and cilantro.
2. In a small bowl, whisk together lime zest, lime juice, mayonnaise, and canola oil. Season with salt and pepper to taste.
3. Gently toss dressing over salad.
4. Serve immediately.
