Broccoli Cheddar Soup with Sliced Hearts of Palm

INGREDIENTS
  • 1 tbsp. butter
  • 1 14 oz. can of Reese Hearts of Palm sliced
  • 2 cups fresh or frozen broccoli florets
  • 1 small onion diced
  • 4 garlic cloves minced
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 3/4 cup shredded Monterey Jack cheese
  • 1/2 tsp. salt
  • 1 tsp. fresh cracked black pepper

DIRECTIONS
  1. In a large soup pot, heat tablespoon of butter until it melts.
  2. Add in hearts of palm, broccoli florets, diced onion, and minced garlic. Cook for approximately 5 minutes, until the onions start to become translucent.
  3. Add chicken broth and simmer for 15 minutes, or until the vegetables become tender.
  4. Use an immersion blender and blend until desired texture is reached.
  5. Add heavy cream, cheese, and salt and pepper to taste. Stir to combine and serve warm.

Notes

  • If you don’t have an immersion blender, no worries! Simply chop up your veggies smaller before starting the cooking process. The soup will be slightly chunkier but still very delicious!
