Caesar Salad with Homemade Dressing & Anchovy

The classic Caesar salad taken to a new level! Bring a hint of smokiness and a new layer of depth by grilling the romaine lettuce.

Ingredients: 

For the Dressing:
1 cup of mayonnaise
Zest of 1 medium lemon
1/4 cup of fresh lemon juice
1 tablespoon of Reese Flat Fillets of Anchovies (about 3 fillets)
2 cloves of garlic, minced
1 teaspoon black pepper
1 cup of grated Parmigiano Reggiano
1/3 cup olive oil
1 teaspoon of sugar

For the Salad:
4 romaine lettuce hearts, washed and lightly dried
2 cups of croutons
1/3 cup parmesan shavings
Black pepper to taste
2 tablespoons Olive oil, extra drizzling
Lemon wedges (optional)

Directions: 
1. Preheat your grill to medium-high heat.
2. Combine all the ingredients in a blender (oil, mayonnaise, lemon zest, lemon juice, anchovy fillets, garlic, black pepper, Parmigiano Reggiano, sugar) until everything is smooth. Place the dressing in a storage container and chill for at least 2 hours to allow the dressing to thicken up as it chills and rests.
3. Drizzle olive oil on the romaine hearts and season with salt and pepper. Place the romaine cut-side down on the grill and cook until nicely marked, 2 to 3 minutes.
4. Add croutons, onions to the romaine lettuce and pour the dressing over top everything.
5. Add parmesan shavings and season with black pepper, to taste. Serve with some lemon wedges.
