Caper Frittata Sandwiches

Bring some excitement to your meals with these Caper Frittata Sandwiches! These Sandwiches are easy to make, and can be served right away or saved for later.

4 sandwiches
Ingredients: 

4 Ciabatta Buns
9” Frittata or crustless Quiche
1 C Arugula
½ C Reese Capers
1 C Olive Tapenade
8 Slices Prosciutto

 

Directions: 
1. Slice the buns in half and slice the frittata in 4 equal slices as close to the size of the ciabatta as possible.
2. Assemble by placing arugula on the bottom, then the slice of frittata. Layer on 2 slices of prosciutto per sandwich. Then, add the olive tapenade and sprinkle on the capers.
3. Serve warm or at room temperature.
