Cherry Cheesecake Jars

INGREDIENTS
Graham Cracker Crust:
  • 1 1/3 c graham crackers, crushed into crumbs
  • 5 tbsp unsalted butter, melted
  • 1/3 c granulated sugar
Cheesecake Filling:
  • 8 oz cream cheese, softened
  • 1 c powdered sugar
  • 1 c heavy whipping cream
  • 1 tsp vanilla extract
  • ¼ tsp salt

Individually portioned desserts that require no baking time. Such a low maintence treat, that will keep your sweet cravings satisfied.


DIRECTIONS
1. Combine graham cracker crumbs, hot melted butter and sugar in a bowl. Mix well to combine to the consistency of wet sand. Set aside.
2. In a mixing bowl, combine the cream cheese, powdered sugar, heavy cream, vanilla extract and salt. Beat until smooth and well combined.
3. To assemble, fill serving containers with a bottom layer of the graham cracker crust. Spoon the cheesecake filling into each of the serving containers on top of the crust. Chill in the fridge for 2-3 hours. Top with cherry filling and enjoy immediately.
4. Cherry Filling: Combine all ingredients in a medium sauce pan. Bring to a brief boil over medium heat. Lower heat and cook for 5-7 minutes, stirring frequently. Remove from heat and transfer to a heat safe container. Bring to room temperature before using in the recipe.
5. Notes: Prepare cherry filling at minimum 30-45 minutes before serving the cheesecake jars to allow time for the cherries to cool.
