Chocolate Cherry French Toast

INGREDIENTS
For the chocolate cream cheese mousse: 
  • 8 oz cream cheese, softened
  • 1/3 cup heavy cream
  • 1/4 cup powdered sugar
  • 3.5 oz chocolate, melted
  • 12 Reese Maraschino Cherries, chopped

For the cherry syrup:
For the French toast:
  • 8 slices thick-cut sourdough bread
  • 3 eggs
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 1/2 tsp ground cinnamon
  • 2 tsp sugar
  • 2 tbsp unsalted butter
Reese Maraschino Cherries, for serving
Whipped Cream, for serving

DESCRIPTION

Cherry Chocolate French Toast is a delicious way to wake up in the morning. Chocolate and Reese Maraschino Cherries make this breakfast a morning glory, where joy and happiness reside. 


DIRECTIONS
To make the chocolate cream cheese mousse:

1. In the bowl of a mixer fitted with the whisk attachment (or using an electric hand mixer), beat the cream cheese until smooth. Add the heavy cream and whip on medium speed until the mixture is thick and creamy. Add the powdered sugar and mix again, just until smooth and combined. Stream in the melted chocolate, and continue mixing until all of the chocolate has been added and the mousse is thick and smooth. Fold in the chopped cherries and set them aside.

To make the cherry syrup:

1. Whisk together maple syrup and cherry syrup from the jar of Reese Maraschino Cherries. Set aside.

To make the French toast:

1. In a large shallow bowl, whisk together eggs, milk, heavy cream, cinnamon, and sugar.1
2. Heat butter in a large sauté pan over medium heat. Working in batches, dunk both sides of each piece of bread into the egg mixture and then transfer them to the hot pan. Cook for 4-5 minutes on each side, until deeply golden and cooked through.
3. Transfer the cooked French toast to a plate and continue with the remaining slices of bread.
4. To serve, layer chocolate cream cheese mousse in between slices of French toast, drizzle with cherry syrup, and garnish with more cherries and whipped cream.
