Classic Caesar Salad with Anchovy

Who does not love a classic caesar salad? This recipe is simple, easy, and delicious! The flavor can’t be beat!

For the Caesar Dressing:
2 Egg Yolks
2 TBSP Dijon
4 Garlic Cloves
1 ½ tsp Worcestershire Sauce
1 tsp Salt
1 tsp Black Pepper
4 Reese Anchovy Filets
Juice of 1 Lemon
¼ C Grated Parmesan Cheese
½ C Extra Virgin Olive Oil

For the Homemade Croutons:
½ C Torn Rustic Bread
2 TBSP Olive Oil
S&P to Taste
2 TBSP Grated Parmesan

For the Salad:
3 C Shredded Kale
3 C Shredded Romaine
½ C Crispy Pancetta
½ C Grated Parmesan
¼ C Shaved Parmesan
Salt and Pepper
Homemade Breadcrumbs
Caesar Dressing to Taste

1. Add all dressing ingredients to blender and blend until smooth and thick.
2. Toss all breadcrumb ingredients and toast in oven at 400 degrees until golden.
3. Toss all salad ingredients and serve.
