A new twist on a traditional tapioca pudding. The mild sweet flavor of vanilla and tapioca is combined with fresh, tropical fruit for a refreshingly light dessert!
DIRECTIONS
1. In a medium saucepan, boil 3 cups of water.
2. Add tapioca and reduce to a simmer. Stir continuously for 10 minutes.
3. Add coconut milk, sugar, vanilla, and salt. Cook on low 10 minutes or until tapioca is soft.
4. Pour into bowl, or for ideal dessert serving, divide into 6 servings.
5. Refrigerate for a few hours or until firm.
6. Garnish with fruit of your choice and serve.
