Green Salad with Artichokes and Hearts of Palm
A quick, flavor packed salad that will leave you satisfied and full of energy to take on the rest of the day.
1 (7.5 oz.) jar of Reese Marinated Artichokes, drained
6 stalks of Reese Hearts of Palm diced into rings
6-8 ounces of cooked shrimp
8 ounces of your favorite power greens
2 roasted beets diced
1 avocado sliced
Pomegranate seeds to garnish
Pomegranate Vinaigrette: 1/3 cup 100% pomegranate juice (Fresh is best-- Did you know you can juice a fresh pomegranate like you would a lemon or an orange?) 2 tablespoons extra virgin olive oil 1 tablespoon lemon juice or juice of one lemon (taste your pomegranate juice if it’s too tangy, add less lemon or if its sweet add more lemon) adjust to your preference 2 tsp of honey Salt and pepper to taste Place all your Ingredients in a mason jar and shake well
