Green Salad with Artichokes and Hearts of Palm

A quick, flavor packed salad that will leave you satisfied and full of energy to take on the rest of the day.

Ingredients: 

1 (7.5 oz.) jar of Reese Marinated Artichokes, drained
6 stalks of Reese Hearts of Palm diced into rings
6-8 ounces of cooked shrimp
8 ounces of your favorite power greens
2 roasted beets diced
1 avocado sliced
Pomegranate seeds to garnish

Pomegranate Vinaigrette: 1/3 cup 100% pomegranate juice (Fresh is best-- Did you know you can juice a fresh pomegranate like you would a lemon or an orange?) 2 tablespoons extra virgin olive oil 1 tablespoon lemon juice or juice of one lemon (taste your pomegranate juice if it’s too tangy, add less lemon or if its sweet add more lemon) adjust to your preference 2 tsp of honey Salt and pepper to taste ​Place all your Ingredients in a mason jar and shake well

Directions: 
1. Add your greens to your salad platter
2. Arrange your hearts of palm, artichokes, beets and avocado on top
3. Add shrimp
4. Drizzle with your vinaigrette
Garnish with pomegranate seeds
5. Tip: Avoid tossing this salad so the beets don't stain the greens
