INGREDIENTS
  • 2 boneless, skinless chicken breast halves, seasoned with salt, black pepper, and paprika, to taste
  • 1 can Reese Marinated Artichoke Hearts, drained and chopped
  • 1/3 cup finely chopped roasted sweet red peppers
  • 1/3 cup mayonnaise
  • 8 slices sourdough bread
  • 1 jar Reese Caramelized Onions
  • Mozzarella cheese slices
  • 2 tablespoons olive oil, for brushing

DIRECTIONS
  1. Prepare the Chicken: Season chicken breasts with salt, pepper, and paprika. Grill over medium heat for about 10 minutes per side, or until fully cooked. Let rest for a few minutes, then slice into thin strips.
  2. Make the Spread: In a medium bowl, combine the chopped artichoke hearts, roasted red peppers, and mayonnaise. Mix until combined.
  3. Assemble the Sandwiches: Spread half of the artichoke mixture evenly over four slices of sourdough bread. Top each with a slice of mozzarella, grilled chicken strips, a spoonful of Reese Caramelized Onions, and another slice of mozzarella. Spread the remaining artichoke mixture on the other four slices of bread and place on top to form sandwiches.
