INGREDIENTS

  • 3 Roma tomatoes (seeded and coarsely chopped into 1/4-inch pieces)
  • 2 serrano chiles (seeded and minced)
  • 1/2 red onion (small, minced)
  • 2 Hass avocados (ripe, pitted, peeled, and chopped)
  • 1/2 cup chopped fresh cilantro
  • 1/2 teaspoon Mexican oregano (dried)
  • 1/2 teaspoon coarse sea salt
  • 1/2 cup fresh lime juice
  • 3 tablespoons olive oil
  • 1 package savory (baked tofu, 8-ounce cut into 1/4-inch dice, optional)
  • 8 corn tortillas (5-inch)
  • corn oil (for frying)
  • chile flakes (chipotle, optional, for garnishing)

DIRECTIONS
1. Chop up tomatoes, chiles, onion, avocado, and cilantro
2. Mix all listed ingredients in one bowl
3. Toast the tortillas
4. Place mixed ingredients over corn tortillas and enjoy!
