Lamb with Mint Jelly & Roasted Potatoes

This dish will take your next holiday gathering to the next level. Refreshing mint is combined with savory lamb to create the perfect bite!

4 lamb steaks (4 – 4.5 oz. each), trimmed
1½ lbs. potatoes, cubed, steamed
½ lb. cherry tomatoes, halved
2 cloves garlic, crushed
¼ cup oil
Cooking spray
¼ cup Reese Mint Jelly
¼ cup lemon juice
1 lb. steamed green vegetables
Mint leaves, to garnish

1. Preheat oven to 450 degrees.
2. Line a baking tray with parchment paper and place potatoes, tomatoes, and garlic.
3. Lightly drizzle with oil and bake for 15 minutes.
4. Spray a skillet with cooking oil and heat on medium.
5. Add lamb and cook for 3–4 minutes on each side. Remove from pan and keep warm.
6. Add mint jelly and lemon juice to pan. Cook on low until sauce is warm.
7. Drizzle mint sauce over lamb and serve with vegetables.
