Lemon Roasted Artichoke Hearts

  • 3 (14oz.) cans of Reese Tender Small Artichoke Hearts
  • 1 1/2 cups of cherry tomatoes, sliced in half
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of Reese Non Pareil Capers
  • 2 tablespoons of DaVinci Extra Virgin Olive Oil
  • 1 large lemon
  • 4 sprigs of thyme, break up into smaller pieces|
  • salt and pepper to taste

1. Preheat the oven to 375 degrees Fahrenheit
2. Drain and rinse Reese Tender Small Artichoke Hearts
3. Juice about 1 tablespoon of the lemon and save the halves
4. Place the artichoke hearts, cherry tomatoes, lemon halves and thyme sprigs on a large rimmed baking sheet and toss with the olive oil, lemon juice and salt and pepper to taste
5. Roast for 30-40 minutes until everything is browned, gently tossing occasionally
6. Remove from heat and allow to cool slightly
7. Garnish with feta cheese and capers
