Lemony Whipped Feta with Marinated Capers

INGREDIENTS
for the marinated capers 
  • 1 (3.5 oz) jar Reese Specialty Foods Capers, drained 
  • 1/4 tsp crushed red pepper 
  • 1/2 tsp fennel seeds, roughly chopped 
  • 1 clove of garlic, cut in 2-3 pieces 2-3 strips orange zest 
  • 1/4 cup DaVinci extra virgin olive oil 
for the whipped feta 
  • 1 8-oz block of feta cheese 
  • 1 tsp lemon zest 
  • 2 tbsp lemon juice 
  • 1/4 cup plain greek yogurt 
  • 1 tbsp DaVinci extra virgin olive oil 
  • Salt and pepper to taste

DESCRIPTION

A flavor bursting appetizer that comes together so quickly at the push of a button! 


DIRECTIONS
1. In a small bowl, stir together all of the ingredients for the marinated capers. Cover and let marinate for at least an hour and up to 3 days.
2. To make the whipped feta, place the feta cheese, greek yogurt, lemon juice, and lemon zest in the bowl of a food processor. Pulse to loosen and then scrape down the sides of the bowl.
3. With the food processor running, slowly stream in olive oil. Continue mixing until the feta is light and fluffy and has a texture similar to hummus, stopping every minute or two to scrape down the sides of the bowl. Taste, and season with salt and pepper.
4. Smear whipped feta on the bottom of a serving dish and spoon marinated capers over the top. Serve with warmed pita bread or crackers.
