INGREDIENTS
  • 1 box Reese Minnesota Wild Rice
  • ¼ tsp salt 
  • 2 ½ cups water 
  • 1 large cucumber 
  • 12 oz cherry tomatoes
  • 4 kale leaves
  • 1 cup red cabbage, finely sliced
  • 12 kalamata olives
  • ½ cup extra-virgin olive oil
  • 3 tablespoons lemon juice
  • Salt and pepper, to taste
  • Tzatziki, to top 
  • 1 tsp dill, to top 

DESCRIPTION

DIRECTIONS
  1. To cook rice: In a medium saucepan, bring 2 1/2 cups water and 1/4 tsp salt to a boil. Stir in entire box of rice, reduce heat, cover and simmer for about 60 minutes until desired texture is reached.
  2. Chop cucumbers, cherry tomatoes, kale and red cabbage.
  3. To assemble the bowl: Add rice to bowl and top with your chopped vegetables and kalamata olives. Stir in olive oil, lemon juice, salt and pepper. Add a dollop of tzatziki, garnish with dill, and enjoy!
