DIRECTIONS
1. In a bowl, add all oranges and clementines. Layer with fennel and mix in avocado and shallot.
2. In a small bowl, gently mix olive oil and champagne vinegar until completely blended together.
3. Whisk honey into mixture. Add salt and pepper to taste.
4. Drizzle dressing over the salad and season more with salt and pepper to taste.
5. Garnish with fennel fronds and mint leaves.
