INGREDIENTS

  • 1 jar Reese Caramelized Onions
  • 2 large potatoes, thinly sliced
  • 3 tbsp unsalted butter, melted
  • 2 tbsp fresh thyme, chopped
  • ½ cup cheddar cheese, grated
  • ⅓ cup Parmesan cheese, grated
  • ½ cup mozzarella cheese, grated
  • Salt and pepper, to taste
  • 1 (12-inch) square shortcrust pastry
For the Herb Salad
  • 1 red onion, finely sliced
  • Large handful of parsley leaves, picked
  • Splash of fresh lemon juice

DESCRIPTION
This rustic Potato & Caramelized Onion Tart combines buttery, flaky shortcrust pastry with layers of tender, golden potatoes, rich Reese Caramelized Onions, and a blend of cheddar, Parmesan, and mozzarella cheeses. The tart is infused with fresh thyme and baked to crispy perfection, creating a comforting, savory dish with deep, caramelized flavors. Served with a bright and refreshing herb salad of red onion, parsley, and a splash of lemon juice, this dish is perfect for an elegant appetizer, a light lunch, or a cozy dinner.

DIRECTIONS
  1. Prepare the Filling: In a large bowl, combine the sliced potatoes, ¾ of the caramelized onions, melted butter, thyme, salt, and pepper. Set aside.
  2. Assemble the Galette: Place the shortcrust pastry on a large sheet of baking paper.
    • Spread half of the potato mixture over the pastry, leaving a 1-inch border around the edges.
    • Sprinkle half of the grated cheeses over the potatoes.
    • Layer the remaining potato mixture, followed by the remaining cheese and the reserved caramelized onions.
  3. Bake the Galette: Gently fold the edges of the pastry up and over the filling to create a rustic crust.
    • Transfer the galette (with the baking paper) to a baking tray.
    • Bake at 375°F for approximately 40 minutes, or until the crust is golden brown and the potatoes are tender.
  4. Prepare the Herb Salad: While the galette bakes, toss the sliced red onion and parsley leaves with a splash of fresh lemon juice.
Serve: Slice the galette into portions and serve warm, accompanied by the fresh herb salad.
