DIRECTIONS
- In a large bowl, combine the sliced potatoes, ¾ of the caramelized onions, melted butter, thyme, salt, and pepper. Set aside.
- Place the shortcrust pastry on a large sheet of baking paper. Spread half of the potato mixture over the pastry, leaving a 1-inch border around the edges. Sprinkle half of the grated cheeses over the potatoes. Layer the remaining potato mixture, followed by the remaining cheese and the reserved caramelized onions.
- Gently fold the edges of the pastry up and over the filling to create a rustic crust. Transfer the galette (with the baking paper) to a baking tray. Bake at 375°F for approximately 40 minutes, or until the crust is golden brown and the potatoes are tender.
