Radicchio White Asparagus Salad

INGREDIENTS
  • 1 head of radicchio
  • 1 jar Reese All-White Asparagus Spears 
  • 1 jar Castelvetrano olives
  • ¼ cup pan roasted pine nuts
  • Sicilian red pepper flakes, to taste
  • Orange zest, to taste
  • Italian parsley, to taste
  • Sea salt, to taste
  • Drizzle of extra virgin olive oil

 


DESCRIPTION

A light salad that makes Reese All White Asparagus the spotlight, it’s the flavors of summer in a stunningly elegant way! Don’t be fooled by this 5-star salad, it’s incredibly easy to make thanks to our Reese All White Asparagus, which are ready to add right out of the jar! If you’ve never had white asparagus, you’re in for a treat: they have a wonderfully soft texture and are widely used in Europe for salads.


DIRECTIONS
1. Core the radicchio and separate the leaves. If you want to make them slightly less bitter you can soak the leaves in cold water for 30 minutes, before drying and assembling the salad.
2. Arrange the radicchio leaves on a large plate, then top with Reese All-White Asparagus Spears, olives, and pine nuts.
3. Add the remaining ingredients to taste and drizzle with olive oil. Serve immediately & enjoy!
