This perfect week-night dinner is super easy to make and delicious to eat. It is a vegetarian meal bursting with fresh flavors. In less than 30 minutes you will have created a delicious home-cooked and healthy meal.
DIRECTIONS
1. Preheat oven to 425° F and line a rimmed sheet pan with parchment paper. Set aside.
2. Remove the thick stalks of the broccoli rabe and roughly chop it. Place the broccoli rabe in a large bowl with the artichoke hearts, garlic cloves, gnocchi, crushed red pepper, salt, a few cranks of black pepper, and 3/4 of the olive oil. Toss to coat.2. 3. Pour everything out onto an even layer on your prepared sheet tray. Bake for 15-20 minutes, until broccoli rabe is crispy on the edges and gnocchi begins to turn golden brown.
4. Transfer back to a large bowl, drizzle with remaining olive oil and toss with fresh herbs and crumbled feta cheese. Taste and adjust seasoning as needed. Serve immediately.
