INGREDIENTS
  • 2 Wheat Baguettes
  • 2 TBSP Olive Oil
  • Salt and Pepper to Taste
  • 4 oz Smoked Salmon
  • ½ Cup Mascarpone Cheese
  • 1 Mini Cucumber
  • ½ Small Red Onion
  • ¼ Cup White Wine Vinegar
  • 2 Rashishes 
  • 3.5 oz Jar Reese Non-Pareil Capers
  • ⅓ Cup Vegetable Oil
  • Dill or other Fresh Herbs for topping *optional

DESCRIPTION

Spice up your family meals with these shareable Smoked Salmon Canapes. This recipe is made with Reese Non-Pareil Capers, smoked salmon, mascarpone cheese, and many more delicious ingredients. This simple and fun recipe is a must-try for the summer! 


DIRECTIONS
1. Slice the red onion as thin as possible and add to a small bowl with the white wine vinegar. Let pickle as you prepare the rest of the ingredients.
2. Slice the cucumber and radish as thin as possible, set aside.
3. In a small saucepan, heat the vegetable oil, then add Reese Non- Pareil Capers and let fry for 30-40 seconds, until they break open and become crispy. Remove from oil onto a paper towel-lined plate.
4. Use a hand mixer and a medium bowl to whip the mascarpone until light and fluffy.
5. Slice the baguettes on a bias, drizzle with olive oil, season with salt and pepper, and toast under the broiler until crisp. Watch them carefully so they don’t burn.
6. Assemble: Spread about 2 tsp of the whipped mascarpone on each toast. Layer on the smoked salmon, pickled onions, cucumber, radish, and fried capers. Add a sprinkle of salt and chopped fresh herbs. Enjoy!
