Spiced Crusted Salmon

INGREDIENTS
  • 4 – 6 oz. pieces of skinless salmon fillet
  • ¼ cup fresh breadcrumbs
  • 1 tbsp. Reese Horseradish
  • 1 tbsp. Dijon mustard
  • 1 tbsp. fresh flat-leaf parsley, chopped
  • 2 tbsp. DaVinci Extra Virgin Olive Oil
  • 4 cups mixed greens
  • 2 tsp. Reese White Wine Vinegar
  • 2 tbsp. fresh lemon juice
  • Salt and pepper, to taste

DESCRIPTION

The horseradish in this dish gives the salmon just the right amount of kick! Pair with your favorite salad for a quick, delicious weeknight meal!


DIRECTIONS
1. Heat oven to 400 degrees.
2. Season salmon with salt and pepper to taste on both sides. Place on a rimmed baking sheet.
3. In a small bowl, mix breadcrumbs, horseradish, mustard, parsley, and 1 tbsp. of olive oil together.

5. Cook 12–15 minutes or until salmon is cooked all the way through.
6. In a medium bowl, combine mixed greens, vinegar, 1 tbsp. of olive oil, lemon juice, and salt and pepper to taste.
7. Serve greens with the salmon.
