Spicy Bacon Artichoke Crostini

18-20 crostini

5 slices of bacon
3 cloves of garlic, grated
1/2 tsp crushed red pepper
Zest of one lemon
1 (13.5 oz) can of Reese Chopped Artichokes, drained
8 oz cream cheese, softened
1 tsp kosher salt
1/4 tsp black pepper
1/4 cup grated Parmesan cheese
1 baguette
Chopped parsley, for garnishing

1. Preheat the oven to 400° F and line a baking sheet with parchment paper.
2. Place the bottom in a cast iron skillet set over medium high heat. Cook for 5-8 minutes each side, until bacon is crispy. Remove from the skillet and drain on a paper towel-lined plate.
3. When the bacon is cooled, roughly chop 3 slices.
4. In a large bowl, stir together garlic, crushed red pepper, lemon zest, chopped bacon, and drained artichokes.
5. Add the cream cheese and stir until smooth and everything is evenly distributed.
6. Add the salt, pepper, and Parmesan and stir once again until well-combined.
7. Slice the baguette into pieces about 3/4” thick and place them on the baking sheet.
8. Spoon about 2 tbsp of the artichoke mixture on top of each baguette slice and bake for 10 minutes, until hot.
9. While the crostini are baking, chop the remaining two slices of bacon. Sprinkle the finished crostini with the chopped bacon and fresh parsley. Serve warm.
