Sweet Potato Cherry Casserole

INGREDIENTS
- 2 lb sweet potatoes, peeled (about 3 large, 4 cups overall), peeled, boiled, mashed
- 1/3 cup unsalted butter, melted
- 1/2 cup packed light or dark brown sugar
- 2 large eggs, beaten
- 1/2 cup heavy cream or whole milk
- 1 tsp pure vanilla extract
- Zest of one orange
- 1/2 tsp cinnamon
- 1/4 tsp salt
- Miniature marshmallows
- 1 jar of Reese Maraschino Cherries

A delicious casserole that is a dessert-like side dish! This Sweet Potato Cherry Casserole is a sweet and savory masterpiece for any occasion.
DIRECTIONS
1. Mix all ingredients together and place in the baking dish.
2. Bake at 350F 35-40 minutes. Let it cool, then top with marshmallows and add Maraschino cherries in between.
3. Turn oven to broil.
4. Place baking dish back in the oven and broil until the marshmallows get slightly browned (for approximately 7-10 minutes).
