The perfect lunch recipe for adults and children alike. Double the artichoke for us– if you love the artichoke spread it makes for a great addition to a variety of dishes.
DIRECTIONS
For the Artichoke Spread
1. In a food processor or high powered blender combine Mayo, Reese’s Artichoke Hearts, Dijon, Apple Cider Vinegar, Garlic, Salt & Pepper. Pulse until blended, but not fully smooth.
For the Sandwich
2. Cut the focaccia into about six 4″ squares and spread 1 TBSP artichoke spread on each side.
3. Layer on the turkey, onions, marinated artichokes, red peppers, feta, and spinach.3. Layer on the turkey, onions, marinated artichokes, red peppers, feta, and spinach.
4. Spray panini press with nonstick spray and press each sandwich for 3-4 minutes, or until toasted and golden brown.
