Yuzu Hearts of Palm Salad

INGREDIENTS
  • 1 (14-ounce) can Reese Sliced Hearts of Palm, drained 
  • 1/2 cup fresh lemon juice 
  • 1/4 cup extra-virgin olive oil
  • 1 tsp fine sea salt, plus more to taste
  • 1/4 tsp freshly ground black pepper, plus more to taste
  • 1 cup chopped tomatoes
  • Flesh of 1 avocado, diced
  • 1 medium Persian cucumber, peeled and diced (1 1/2 cups)
  • 1/2 jalapeño chile pepper, stemmed and finely chopped
  • 1 small bunch fresh cilantro, finely chopped (1 cup)
  • 1 tsp black sesame seeds, for garnish (optional)
  • Tortilla chips or tostadas, for serving

DESCRIPTION

A healthy Yuzu Hearts of Palm Salad blends flavors of citrus and herbs with a symphony of textures in every bite. Crunchy cucumbers, rich avocados, and the star ingredient that brings this fresh dish together: tender Reese Sliced Hearts of Palm!


DIRECTIONS
1. Add Reese Sliced Hearts of Palm to a medium bowl, along with the lemon juice, olive oil, salt and pepper, and toss to combine. Taste, and season with more salt if needed; it should taste a little too salty, but will balance out once you add the other ingredients. Cover and refrigerate for at least 30 minutes and up to 2 hours.
2. Add the tomato, avocado, cucumber, jalapeño and cilantro to the bowl with Reese Sliced Hearts of Palm and, using a spatula or your clean hands, carefully fold the mixture to combine, trying to keep the Hearts of Palm from breaking. Taste, and season with more salt, if needed.
3. Transfer to a serving platter or bowl, top with the black sesame seeds, if using, and serve with chips or tostadas.
