Hearts of Palm and Tomato Salad

Your new go-to salad because it is so fast & simple, yet so delicious

Ingredients: 

1 (14oz.) can Reese Hearts of Palm, drained and sliced into 1/4 inch rings
3 cups cherry tomatoes sliced into halves
1/4 cup thinly sliced or shaved red onion
1/4 cup chopped Italian parsley
1/4 cup vegetable oil
1 1/2 tablespoons red wine vinegar
1 teaspoon sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Directions: 
1. Assemble tomatoes, Reese Hearts of Palm, red onion and parsley in a large bowl
2. In a small bowl, combine the vegetable oil, vinegar, sugar and salt and pepper, mixing until the sugar is dissolved
3. Pour vinaigrette over the salad mixture, tossing gently
4. Add more salt and pepper to taste and it’s ready to serve
