Spiced Crusted Salmon

Serves 4

INGREDIENTS
  • 4 – 6 oz pieces of skinless salmon fillet
  • ¼ cup fresh breadcrumbs
  • 1 tbsp Reese Horseradish
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh flat-leaf parsley, chopped
  • 2 tbsp DaVinci Extra Virgin Olive Oil
  • 4 cups mixed greens
  • 2 tsp Reese White Wine Vinegar
  • 2 tbsp fresh lemon juice
  • Salt and pepper, to taste

DESCRIPTION

The horseradish in this dish gives the salmon just the right amount of kick! Pair with your favorite salad for a quick, delicious weeknight meal!


DIRECTIONS
1. Heat oven to 400°F.
2. Season salmon with salt and pepper to taste on both sides. Place on a rimmed baking sheet.
3. In a small bowl, mix breadcrumbs, horseradish, mustard, parsley, and 1 tbsp of olive oil together.
4. Add mixture to top of salmon, pressing gently to help mixture stick.
5. Cook 12–15 minutes or until salmon is cooked all the way through.
6. In a medium bowl, combine mixed greens, vinegar, 1 tbsp of olive oil, lemon juice, and salt and pepper to taste.
7. Serve greens with the salmon.
