INGREDIENTS
  • 4 lb Yukon Gold Potatoes, washed and peeled
  • Salt
  • ¾ C (1 ½ Sticks) Salted Butter
  • ½ C Heavy Cream
  • ½ C Sour Cream
  • 1 C Wilted Spinach
  • 2 Jars Reese Marinated Artichokes
  • Fresh Black Pepper to Taste

DESCRIPTION

This Spinach & Artichoke Mashed Potatoes recipe is a game changer! It is quick and easy to make, but packed with flavor.


DIRECTIONS
1. In a large stockpot, add the potatoes, then cover with water. Add a generous pinch of salt and boil for 17-18 minutes, or until potatoes are fork tender.
2. Drain, return to pot, then mash using a potato masher
3. In a small sauce pan, add the butter and cream and warm until butter has melted.4. Pour warm cream and butter over potatoes and stir until combined.
