Hearts of Palm are incredibly versatile and can be used as a replacement for seafood in a lot of dishes. This easy appetizer is great for any occasion. from a summer cookout to a fancy dinner party.
DIRECTIONS
1. Preheat the oven to 375 degrees.
2. Place baguette slices on a baking sheet. Bake until both sides are lightly toasted.
3. Remove baguettes and set the oven to broil.
4. On a cutting board, cut hearts of palms and tomato into fourths, lengthwise.
5. In a medium mixing bowl, gently toss quartered heart of palms, diced tomato, red pepper, mustard, lime juice, lime zest, mayonnaise, cayenne pepper, and mint leaves. Season with salt and pepper to taste.
6. Spoon 2 tbsp. of the mixture onto each slice of the toasted baguette.
7. On a baking sheet, broil for 3–4 minutes or until warm.
